Buffalo Chickpea Salad Wrap
Ingredients:
Salad:
- 1 can of chickpeas, drained and rinsed
- 1/2 cup carrots, shredded
- 1 celery stalk, diced
- 1/4 cup cilantro, diced
- 2 Tablespoons red onion, diced
Dressing:
- 1/4 cup plain yogurt
- 3 to 4 Tablespoons buffalo sauce
Wraps:
- 1 avocado, sliced
- 2 to 3 cups spinach
- Tortillas of choice
- Red onion, sliced
Instructions:
- Add the chickpeas to a bowl and smash them with a fork, then add in the red onion, carrots, and celery.
- Next, add in the yogurt and buffalo sauce and combine until coated.
- Take the wraps and add in about 1/2 cup of the buffalo chickpea mixture, top with spinach, red onion and avocado.
- Serve and enjoy!
