Chocolate Snack Bars
Ingredients:
Crust:
- 1 1/2 cups rolled oats
- 8 medjool dates, pitted
- 1/2 cup coconut oil, melted
- 1 1/2 cups pecans, chopped
- Pinch of salt
Chocolate Layer:
- 1/4 cup coconut oil, melted
- 1/2 cup cocoa powder
- 1/4 cup maple syrup
Instructions:
- To make the crust, add all of the ingredients into a food processor and pulse until a sticky dough is created. Set aside about 3/4 cup of this mixture for later. Press the remaining mixture into a loaf pan that is lined with parchment paper.
- To make the chocolate filling, whisk together the melted coconut oil, maple syrup and cocoa powder until combined. Pour this mixture over the crust in the loaf pan.
- Sprinkle the remaining crust on top of the chocolate and gently press in so it stays. Sprinkle with salt if desired.
- Lastly, place the pan into the freezer and chill for 2-hours. Once it is frozen, cut into bars and serve.
