Lemony Kale Salad
Ingredients:
For Dressing:
- 1 teaspoon Dijon mustard
- 2 Tablespoons olive oil
- 1 to 2 Tablespoons lemon juice
- 1 medium garlic clove, minced
- Black black pepper and salt to taste
- Pinch of red pepper flakes
Salad:
- 1 medium to large bunch of kale, chopped
- 1/8 teaspoon salt
- 1/2 cup grated parmesan cheese
Instructions:
- In a bowl, add all of the dressing ingredients and whisk until combined.
- Wash the kale in a strainer, dry off the kale and chop it on a cutting board as small as you would like.
- Add the chopped kale into a medium sized bowl and sprinkle with salt. Massage the kale with your hands until the leaves are darker in color and more fragrant.
- Next, drizzle the dressing onto the kale, then add the parmesan cheese and gently toss it together until combined.
- Let the salad sit for 10-15 minutes before serving for best taste.
- Serve and enjoy!
