Almond Butter Zucchini Bars

Ingredients:

  • 1/4 cup + 2 Tablespoons olive oil
  • 2 cups rolled oats
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1-2 medium zucchinis, grated
  • 2 eggs
  • 8 medjool dates, pitted
  • 1 teaspoon baking soda
  • Pinch of salt
  • Optional chocolate chips

Instructions:

  1. Preheat the oven to 350 F. In a food processor, add half of the zucchini, olive oil, oats, maple syrup, almond butter, eggs, dates, and salt. Blend until smooth.
  2. Add the batter into a bowl and fold in the other half of the zucchini and the chocolate chips.
  3. Pour the batter into a square baking dish and bake for 35-40 minutes until the top if golden brown.
  4. Let it cool completely before cutting.
  5. Serve and enjoy!
