Almond Butter Zucchini Bars
Ingredients:
- 1/4 cup + 2 Tablespoons olive oil
- 2 cups rolled oats
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1-2 medium zucchinis, grated
- 2 eggs
- 8 medjool dates, pitted
- 1 teaspoon baking soda
- Pinch of salt
- Optional chocolate chips
Instructions:
- Preheat the oven to 350 F. In a food processor, add half of the zucchini, olive oil, oats, maple syrup, almond butter, eggs, dates, and salt. Blend until smooth.
- Add the batter into a bowl and fold in the other half of the zucchini and the chocolate chips.
- Pour the batter into a square baking dish and bake for 35-40 minutes until the top if golden brown.
- Let it cool completely before cutting.
- Serve and enjoy!
