Carrot Coffee Cake

Ingredients:

Coffee Cake:

  • 2 large carrots, shredded
  • 1/2 cup maple syrup
  • 1/2 cup applesauce
  • 2 eggs
  • 1 cup gluten free flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • Pinch of salt

Topping:

  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/2 cup almond meal
  • 1/4 cup chopped almonds
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. For the cake: Preheat the oven to 350 F. Whisk together the wet ingredients (eggs, carrots, maple syrup, applesauce), then add in the dry ingredients (flour, cinnamon, baking soda, salt) and combine.
  2. Add the batter into a 9-inch round baking pan. Make the topping.
  3. For the topping: Add all ingredients into a bowl and mix together until clumpy. Crumble the mixture onto the batter in the baking pan. Bake for 30 minutes until the center is set.
  4. Remove and let cool.
  5. Once cool, serve and enjoy!
