Carrot Coffee Cake
Ingredients:
Coffee Cake:
- 2 large carrots, shredded
- 1/2 cup maple syrup
- 1/2 cup applesauce
- 2 eggs
- 1 cup gluten free flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- Pinch of salt
Topping:
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1/2 cup almond meal
- 1/4 cup chopped almonds
- 1 teaspoon cinnamon
- Pinch of salt
Instructions:
- For the cake: Preheat the oven to 350 F. Whisk together the wet ingredients (eggs, carrots, maple syrup, applesauce), then add in the dry ingredients (flour, cinnamon, baking soda, salt) and combine.
- Add the batter into a 9-inch round baking pan. Make the topping.
- For the topping: Add all ingredients into a bowl and mix together until clumpy. Crumble the mixture onto the batter in the baking pan. Bake for 30 minutes until the center is set.
- Remove and let cool.
- Once cool, serve and enjoy!
