Light & Crispy Tofu
Ingredients:
- 1 block of extra firm tofu
- 1 Tablespoon tamari (soy sauce)
- 1 Tablespoon olive oil
- 2 Tablespoons cornstarch
- 1/4 cup yum yum sauce (1 cup mayonnaise, 2 Tablespoons tomato paste, 1 Tablespoon rice vinegar, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 Tablespoon sugar, 1 Tablespoon melted butter, 2-3 Tablespoons water)
- 1 Tablespoon honey (optional)
- 1 1/2 cups white rice
- 1/4 cup green onions, chopped (for topping)
Instructions:
- Preheat the oven to 425 F. Line a baking sheet with parchment paper.
- Cook the rice according to the package.
- Prep the tofu: press the tofu with something heavy to get as much moisture out as possible, then cut the tofu into even cubes. Add the tofu into a bowl and add in the cornstarch, tamari, and olive oil. Toss and gently coat the tofu in this mixture.
- Add the coated tofu to the lined baking sheet and add it into the oven, cook for 20-25 minutes.
- Make the yum yum sauce: add all ingredients into a bowl and mix together.
- Once the tofu is cooked, serve with yum yum sauce.
- Serve with rice and green onions, enjoy!
