Pumpkin Walnut Chili

Pumpkin Walnut Chili

Ingredients:

  • Half an onion, chopped small
  • 3 cloves of garlic, minced
  • 128-ounce can fire-roasted tomatoes
  • 2 poblano peppers, chopped
  • 2-3 chipotle peppers, chopped
  • 1 cup red lentils
  • 2 cups walnuts, chopped
  • 2 Tablespoons chili powder
  • 1 Tablespoons smoked paprika
  • 1 1/2 teaspoons salt
  • 6 cups water or broth
  • 1 14-ounce can of pumpkin puree
  • 1 cans black beans, drained and rinsed

Instructions:

  1. Place all of the ingredients in an instant pot and set it to soup mode.
  2. Release the steam and stir in the pumpkin puree and black beans, season with more salt and spices to taste.
  3. Serve with tortilla chips, avocado, rice, etc. and enjoy!
