Pumpkin Walnut Chili
Ingredients:
- Half an onion, chopped small
- 3 cloves of garlic, minced
- 128-ounce can fire-roasted tomatoes
- 2 poblano peppers, chopped
- 2-3 chipotle peppers, chopped
- 1 cup red lentils
- 2 cups walnuts, chopped
- 2 Tablespoons chili powder
- 1 Tablespoons smoked paprika
- 1 1/2 teaspoons salt
- 6 cups water or broth
- 1 14-ounce can of pumpkin puree
- 1 cans black beans, drained and rinsed
Instructions:
- Place all of the ingredients in an instant pot and set it to soup mode.
- Release the steam and stir in the pumpkin puree and black beans, season with more salt and spices to taste.
- Serve with tortilla chips, avocado, rice, etc. and enjoy!
