Chocolate Brownie Date Balls
Ingredients:
- 10 medjool dates, pitted
- 3/4 cup walnuts
- 1/2 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup pumpkin puree
- Pinch of salt
Instructions:
- In a food processor, add the walnuts in and processor until they become chopped. Add into a small bowl and save for later.
- Next, add in the pumpkin puree, dates, salt, vanilla extract, cocoa powder and process all together until it becomes smooth.
- Scoop out some of the mixture and roll into a small golf ball size, continue until all the mixture is gone.
- Roll each ball in the crushed walnuts.
- Serve immediately or freeze.
- Enjoy!
