Avocado Egg Salad

Ingredients

  • 4 hard boiled eggs, chopped
  • 4 hard boiled egg whites, chopped (keep yolks)
  • 1 Tablespoon light mayonnaise 
  • 1 medium avocado, chopped
  • 1 Tablespoon Greek yogurt, plain
  • 2 teaspoons red wine vinegar
  • 1/2 Tablespoon chives, chopped small
  • 1/2 teaspoon salt
  • Ground pepper to taste

Instructions

  1. Combine the egg yolks with the avocado, yogurt, mayo, vinegar, chives, salt and pepper in a medium bowl. Mash together with a fork.
  2. Combine this mixture with the egg whites and adjust salt as needed.
