Avocado Egg Salad
Ingredients
- 4 hard boiled eggs, chopped
- 4 hard boiled egg whites, chopped (keep yolks)
- 1 Tablespoon light mayonnaise
- 1 medium avocado, chopped
- 1 Tablespoon Greek yogurt, plain
- 2 teaspoons red wine vinegar
- 1/2 Tablespoon chives, chopped small
- 1/2 teaspoon salt
- Ground pepper to taste
Instructions

Combine the egg yolks with the avocado, yogurt, mayo, vinegar, chives, salt and pepper in a medium bowl. Mash together with a fork.
- Combine this mixture with the egg whites and adjust salt as needed.
