Air Fryer Breaded Chicken
Ingredients:
Chicken:
- 2 boneless, skinless chicken breast
- 1/2 medium lemon, juiced
- 1 Tablespoon olive oil
- 1/4 + 1/8 teaspoon salt & black pepper
- 4 cloves of garlic, minced
- 2 Tablespoon Pecorino Romano cheese, grated
- 1/2 teaspoon Italian seasoning
- 1/4 cup breadcrumbs
Salad:
- 2 cups romaine lettuce, chopped
- 2 Tablespoons red onions, chopped
- 2 teaspoons olive oil
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 2 teaspoons red wine vinegar
- 2 mini cucumbers, diced
- 1/2 medium avocado
- Black pepper to taste
Instructions:
- In a bowl, add the chicken breast with the lemon juice, olive oil, Italian seasoning, salt, pepper, garlic, breadcrumbs and cheese.
- Spray the air fryer basket with oil. Add the chicken in batches in a single layer across the air fryer. cook at 400 F for 8 minutes.
- In a seperate bowl, combine the garlic, red onions, olive oil, red wine vinegar, salt and pepper. Let that sit together for about 5 minutes for the onion to give flavor.
- Add in the cucumbers, avocado, lettuce and toss together.
- Serve the breaded chicken and top with the salad.
