Air Fryer Breaded Chicken

Ingredients:

Chicken:

  • 2 boneless, skinless chicken breast
  • 1/2 medium lemon, juiced
  • 1 Tablespoon olive oil
  • 1/4 + 1/8 teaspoon salt & black pepper
  • 4 cloves of garlic, minced
  • 2 Tablespoon Pecorino Romano cheese, grated
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup breadcrumbs

Salad:

  • 2 cups romaine lettuce, chopped
  • 2 Tablespoons red onions, chopped
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 2 teaspoons red wine vinegar
  • 2 mini cucumbers, diced
  • 1/2 medium avocado
  • Black pepper to taste

Instructions:

  1. In a bowl, add the chicken breast with the lemon juice, olive oil, Italian seasoning, salt, pepper, garlic, breadcrumbs and cheese.
  2. Spray the air fryer basket with oil. Add the chicken in batches in a single layer across the air fryer. cook at 400 F for 8 minutes.
  3. In a seperate bowl, combine the garlic, red onions, olive oil, red wine vinegar, salt and pepper. Let that sit together for about 5 minutes for the onion to give flavor. 
  4. Add in the cucumbers, avocado, lettuce and toss together. 
  5. Serve the breaded chicken and top with the salad.
  6. Enjoy!
