Grilled Veggie Kabobs

Kabobs are a fun way to make use of the grill in the summer. Even better, it’s a great way to make eating veggies a fun experience! There are different ways you can season your kabobs to give you different flavor profiles. Check out our suggestions below!

First, you want to choose your veggies. When cooking kabobs, you want to remember that everything will be cooking at the same time and at the same temperature, so you want to choose vegetables that will cook similarly. For instance, you don’t want to cook mushrooms at the same time as carrots, because the mushrooms take less time to cook than the carrots, so you’ll either end up with mushy mushrooms or uncooked carrots! This is what we want to avoid. Here are our suggestions:

  • Zucchini
  • Cauliflower
  • Mushrooms
  • Red Onion
  • Bell Pepper
  • Eggplant
  • Grape Tomatoes

Next, you want to cut your vegetables into 1-inch slices. When cooking kabobs, you want to make sure that the pieces are not too large, so they cook all the way through, but also not so small that they burn quickly and/or fall off the kabob.

Then, you want to marinate your ingredients. Choose a marinade that will pair well with your other dishes for the meal.

  • Keep it simple: Extra Virgin Olive Oil, Salt, Pepper
  • Italian herbs: Balsamic Vinegar, Extra Virgin Olive Oil, Minced Fresh Garlic, Italian Herbs, Crushed Red Pepper Flakes, Salt
  • Tropical: Thyme, Garlic Powder, Onion Powder, Cayenne, Allspice, Paprika, Nutmeg, Salt, Pepper, Maple Syrup (or other natural sweetener of your choice). Tip: add some freshly cut pineapple in this one!
  • Mediterranean: Extra Virgin Olive Oil, Red Wine Vinegar, Lemon Juice, Fresh Minced Garlic, Oregano, Basil, Salt, Pepper

Toss your veggies in a mixing bowl with the marinade of your choosing and place in the refrigerator for at least 1 hour. The longer the veggies marinate, the more flavor they will absorb.

In the meantime, you want to prepare your skewers. Using bamboo skewers, soak them in water so they are completely covered for 20 minutes. Soaking helps them from burning when they are over the open flame on the grill.

Once the veggies are done marinating, thread your veggies on the skewers!

Preheat your grill and oil the grates. When you are ready, place the skewers on the grill and rotate every few minutes. If you are going for a crunchier texture, cook for less time. If you like your veggies well done, keep rotating and cooking them until they are soft.
