Almond Flour Cookies
Ingredients:
- 6 Tablespoons butter
- 1/2 teaspoon almond extract
- 1 teaspoon stevia or 1/3 cup sugar
- 1 large egg
- 1/4 teaspoon baking soda
- 1 1/2 cups almond flour
- 12 raw almonds
- Pinch of salt
Instructions:
- Preheat the oven to 350 F. Line and sheet pan with parchment paper.
- In a large mixing bowl, using a handheld electric whisk on medium speed, whisk together the stevia, butter, egg and almond extract.
- Gradually mix in the almond flour, 1/2 cup at a time. Then mix in the baking soda and salt.
- Using a scoop, add the dough two inches apart from each other onto the lined cookie sheet.
- Press an almond into each cookie ball.
- Bake the cookies for 15-20 minutes until they become lightly browned.
- Once the are cooked, let the cookies cool completely on the baking sheet before serving.
- Serve and enjoy!
