Almond Flour Cookies

Ingredients:

  • 6 Tablespoons butter
  • 1/2 teaspoon almond extract
  • 1 teaspoon stevia or 1/3 cup sugar
  • 1 large egg
  • 1/4 teaspoon baking soda
  • 1 1/2 cups almond flour
  • 12 raw almonds
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350 F. Line and sheet pan with parchment paper.
  2. In a large mixing bowl, using a handheld electric whisk on medium speed, whisk together the stevia, butter, egg and almond extract.
  3. Gradually mix in the almond flour, 1/2 cup at a time. Then mix in the baking soda and salt.
  4. Using a scoop, add the dough two inches apart from each other onto the lined cookie sheet.
  5. Press an almond into each cookie ball.
  6. Bake the cookies for 15-20 minutes until they become lightly browned.
  7. Once the are cooked, let the cookies cool completely on the baking sheet before serving.
  8. Serve and enjoy!
