Loaded Veggie Nachos!

Ingredients:

  • 1 bag of corn tortilla chips
  • 1 can of roasted corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1/2 cup red onion, chopped
  • 1/2 can green chilis, drained and rinsed
  • 1/4 cup jalapenos, diced small
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • Pinch of cayenne pepper (optional)
  • Vegan cheese sauce

For Cheese Sauce:

  • 3/4 cups canned coconut milk
  • 2 Tablespoons tapioca flour
  • 3 Tablespoons nutritional yeast
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • Pinch of paprika

For Garnish (all optional):

  • Cherry tomatoes, sliced
  • Cilantro, chopped
  • Chives, chopped
  • Avocado, sliced
  • Salsa
  • Lime

Instructions:

  1. Make the cheese sauce: Add all of the ingredients into a saucepan on the stove, bring it to a boil while constantly stirring. Let the mixture simmer on medium heat until it starts to thicken.
  2. In a bowl, add together the black beans, corn red onion, chilis, spiced and jalapenos, mix together.
  3. Place the corn tortilla chips on a large tray/large plate, add the corn & bean mixture on top of the chips spread evenly. 
  4. Pour the cheese sauce over top of the chips and corn & bean mix.
  5. Garnish with tomatoes, avocado, cilantro, chives, salsa and lime.
  6. Serve immediately and enjoy!
