Roasted Red Pepper Hummus!
Ingredients:
- 1/2 yellow onion, diced
- 2 red bell peppers, diced
- 6 Tablespoons tahini
- 15 ounce can of garbanzo beans, drained and rinsed
- 2 garlic gloves, minced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 Tablespoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- Salt to taste
- Fresh parsley, to top
Instructions:
- Preheat the oven to 450 F.
- Add the bell peppers to a baking sheet lined with parchment paper. Cook them for 30-35 minutes until they are charred, flip them halfway through.
- Remove the peppers and let them cool. Then cut in half and scoop out the inside.
- In a food processor, add in the roasted red peppers, onions, garlic, garbanzo beans, cumin, paprika, pepper, lemon juice, olive oil, tahini and blend until smooth. Add salt and pepper to taste.
- Garnish with parsley if desired. Serve with your favorite crackers, pita bread or veggies and enjoy!
