Buffalo Chickpea Salad Wrap

Ingredients:

Salad:

  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup carrots, shredded
  • 1 celery stalk, diced
  • 1/4 cup cilantro, diced
  • 2 Tablespoons red onion, diced

Dressing:

  • 1/4 cup plain yogurt
  • 3 to 4 Tablespoons buffalo sauce

Wraps:

  • 1 avocado, sliced
  • 2 to 3 cups spinach
  • Tortillas of choice
  • Red onion, sliced

Instructions:

  1. Add the chickpeas to a bowl and smash them with a fork, then add in the red onion, carrots, and celery.
  2. Next, add in the yogurt and buffalo sauce and combine until coated.
  3. Take the wraps and add in about 1/2 cup of the buffalo chickpea mixture, top with spinach, red onion and avocado.
  4. Serve and enjoy!
