Chocolate Snack Bars



  • 1 1/2 cups rolled oats
  • 8 medjool dates, pitted
  • 1/2 cup coconut oil, melted
  • 1 1/2 cups pecans, chopped
  • Pinch of salt

Chocolate Layer:

  • 1/4 cup coconut oil, melted 
  • 1/2 cup cocoa powder
  • 1/4 cup maple syrup


  1. To make the crust, add all of the ingredients into a food processor and pulse until a sticky dough is created. Set aside about 3/4 cup of this mixture for later. Press the remaining mixture into a loaf pan that is lined with parchment paper.
  2. To make the chocolate filling, whisk together the melted coconut oil, maple syrup and cocoa powder until combined. Pour this mixture over the crust in the loaf pan.
  3. Sprinkle the remaining crust on top of the chocolate and gently press in so it stays. Sprinkle with salt if desired.
  4. Lastly, place the pan into the freezer and chill for 2-hours. Once it is frozen, cut into bars and serve.
  5. Enjoy!
