Christmas Cookies

Ingredients:

  • 1 1/2 cups + 1 Tablespoon flour of choice (regular or gluten free)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, softened 
  • 1/3 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 1 1/2 cups M&M's or chocolate chips
  • Optional: 1/4 cup holiday sprinkles

Instructions:

  1. Preheat the oven to 350F. Line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. Using a stand or hand mixer, with the paddle attachment, beat the sugar and the butter for 1-2 minutes, until it becomes light and fluffy. Then add in the egg and vanilla extract, mixing until combined. Then on low speed, slowly add in the flour and mix until combined.
  4. Gently stir in the M&M's, about 1 cups saving the rest to press into the top of the cookies.
  5. Add the sprinkles into a small bowl.
  6. Scoop the cookie dough into small balls, about 1-2 Tablespoons each. Gently add some M&M's and sprinkles on top of each cookie.
  7. Add them onto the lined baking sheets and into the oven for 8-11 minutes.
  8. Once the cookies are done baking, transfer them onto a cooling rack until they are cooled completely. 
  9. Serve and enjoy!
