Zucchini Gnocchi
Ingredients:
- 3 pounds zucchini, grated
- 1/4 cup Pecorino Romano cheese, grated
- 3/4 cup all-purpose flour
- 1 teaspoon salt
- 2 cups marinara sauce
- Olive oil spray
- Fresh basil, for serving
Instructions:
- Add the zucchini into a large pot and cook and cover for about 8 to 12 minutes until it becomes tender and soft, stirring occasionally. Set aside to cool.
- Once it is cooled, use a dish towel and squeeze out as much excess water as possible, then place the zucchini in a bowl.
- Next, add in the flour, cheese and salt to the bowl and mix together with a fork and then use your hands to create a dough.
- Dust a tabletop surface with some flour, then seperate the dough into 8 sections. Roll each section into a 1/2 inch thick rope and set aside.
- Cut each rope into 13 equal sized, gnocchi like, pieces.
- In two batches, spray a large skillet with oil and warm it over medium heat. Add half of the gnocchi onto the skillet and let it cook for 2 minutes, then gently flip them over, sprinkle some salt and cook for another 3-4 minutes. Continue until all of the gnocchi is cooked.
- Once they are all cooked, add them back into the skillet and add in the marinara sauce, stir together and then add into bowls for serving.
- Serve with grate cheese and enjoy!
