Zucchini Gnocchi

Zucchini Gnocchi

Ingredients:

  • 3 pounds zucchini, grated
  • 1/4 cup Pecorino Romano cheese, grated
  • 3/4 cup all-purpose flour
  • 1 teaspoon salt
  • 2 cups marinara sauce
  • Olive oil spray
  • Fresh basil, for serving

Instructions:

  1. Add the zucchini into a large pot and cook and cover for about 8 to 12 minutes until it becomes tender and soft, stirring occasionally. Set aside to cool.
  2. Once it is cooled, use a dish towel and squeeze out as much excess water as possible, then place the zucchini in a bowl.
  3. Next, add in the flour, cheese and salt to the bowl and mix together with a fork and then use your hands to create a dough.
  4. Dust a tabletop surface with some flour, then seperate the dough into 8 sections. Roll each section into a 1/2 inch thick rope and set aside.
  5. Cut each rope into 13 equal sized, gnocchi like, pieces. 
  6. In two batches, spray a large skillet with oil and warm it over medium heat. Add half of the gnocchi onto the skillet and let it cook for 2 minutes, then gently flip them over, sprinkle some salt and cook for another 3-4 minutes. Continue until all of the gnocchi is cooked.
  7. Once they are all cooked, add them back into the skillet and add in the marinara sauce, stir together and then add into bowls for serving.
  8. Serve with grate cheese and enjoy!
