Cowboy Caviar
Ingredients:

- 2 cans black eyes peas (14-ounce), drained and rinsed
- 1 1/2 cups frozen corn, drained and rinsed
- 1 can (14-ounce), black beans
- 1 1/2 cups chopped ripe tomatoes
- 3/4 cups red onion, chopped
- 1 medium red bell pepper, chopped small
- 1/2 cup cilantro, diced
- 1 to 2 jalapenos, diced
- 1 avocado, cubed
Italian Dressing:
- 3 Tablespoons lime juice
- 1/3 cup olive oil
- 1 teaspoon salt, or to taste
- 2 medium cloves of garlic, minced
- 1/2 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon maple syrup
- 1/8 teaspoon red pepper flakes
- Black pepper to taste
Instructions:
- In a large bowl, combine the black beans, black eyed peas, corn, chopped tomatoes, onion, cilantro jalapenos and bell peppers.
- In a cup, whisk together the dressing ingredients until well combined.
- Add the cubed avocado in the large bowl, then add in the dressing and mix together. Add more salt and pepper to taste.
- For best taste, let the mixture sit at least 20 minutes before serving.
- Serve with chips or vegetables and enjoy!
