Cowboy Caviar

Ingredients:

Cowboy Caviar:

  • 2 cans black eyes peas (14-ounce), drained and rinsed
  • 1 1/2 cups frozen corn, drained and rinsed
  • 1 can (14-ounce), black beans
  • 1 1/2 cups chopped ripe tomatoes
  • 3/4 cups red onion, chopped
  • 1 medium red bell pepper, chopped small 
  • 1/2 cup cilantro, diced
  • 1 to 2 jalapenos, diced
  • 1 avocado, cubed

Italian Dressing:

  • 3 Tablespoons lime juice
  • 1/3 cup olive oil
  • 1 teaspoon salt, or to taste
  • 2 medium cloves of garlic, minced
  • 1/2 teaspoon dried basil
  • 1 teaspoon dried oregano 
  • 1 teaspoon maple syrup
  • 1/8 teaspoon red pepper flakes
  • Black pepper to taste

Instructions:

  1. In a large bowl, combine the black beans, black eyed peas, corn, chopped tomatoes, onion, cilantro jalapenos and bell peppers.
  2. In a cup, whisk together the dressing ingredients until well combined. 
  3. Add the cubed avocado in the large bowl, then add in the dressing and mix together. Add more salt and pepper to taste.
  4. For best taste, let the mixture sit at least 20 minutes before serving.
  5. Serve with chips or vegetables and enjoy!
