Lemony Kale Salad

Lemony Kale Salad


For Dressing:

  • 1 teaspoon Dijon mustard
  • 2 Tablespoons olive oil
  • 1 to 2 Tablespoons lemon juice
  • 1 medium garlic clove, minced
  • Black black pepper and salt to taste
  • Pinch of red pepper flakes


  • 1 medium to large bunch of kale, chopped
  • 1/8 teaspoon salt
  • 1/2 cup grated parmesan cheese


  1. In a bowl, add all of the dressing ingredients and whisk until combined.
  2. Wash the kale in a strainer, dry off the kale and chop it on a cutting board as small as you would like.
  3. Add the chopped kale into a medium sized bowl and sprinkle with salt. Massage the kale with your hands until the leaves are darker in color and more fragrant.
  4. Next, drizzle the dressing onto the kale, then add the parmesan cheese and gently toss it together until combined.
  5. Let the salad sit for 10-15 minutes before serving for best taste.
  6. Serve and enjoy!
