Maple Banana Bread with Cinnamon Butter

Maple Banana Bread with Cinnamon Butter

Ingredients:

  • 4 medium very ripe bananas
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup walnuts (optional)

For the Cinnamon Butter:

  • 1 stick salted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350 F and grease a bread pan or add parchment paper.
  2. In a bowl, add the coconut oil, bananas, eggs, vanilla extract and maple syrup. Stir together until combined. Add the baking soda, flour, salt and cinnamon into the mixture and combine. Fold in the walnuts if using.
  3. Pour the batter into the greased bread pan. Bake for 50-60 minutes or until the center is set. Remove and let cool for at least 30 minutes before cutting.
  4. While the bread is cooling, make the cinnamon butter. Add the butter, vanilla extract, maple syrup, cinnamon and salt into a bowl and beat together.
  5. Slice and serve with cinnamon butter. Enjoy!
