Turkish Eggs with Whipped Feta
Ingredients:
For Whipped Feta:
- 1/4 cup plain Greek yogurt
- 6 ounces feta cheese
For Turkish Eggs:
- 1/3 cup olive oil
- 1 clove garlic, minced
- 4 large eggs
- 4 cups arugula & baby spinach mix
- 1 cucumber, sliced thin
- 1 teaspoon crushed red pepper flakes
- 2 Tablespoons salted butter
- 1/2 teaspoon paprika
- 1 cup mixed herbs (cilantro, basil, dill, parsley, etc.)
- Juice & zest from one lemon
- Salt & pepper to taste
- 1 avocado, sliced
Instructions:
- Make the whipped feta: In a food processor, add the Greek yogurt and feta. Pulse together until it becomes creamy. Add a pinch of black pepper if desired.
- Make the chili butter: In a saucepan, melt together the butter, crushed red pepper flakes, paprika, and 2 Tablespoons of olive oil.
- Heat a skillet over medium heat and add 3 Tablespoons olive oil. Once the oil is heated, crack the eggs into the pan and fry to desired consistency. Once they are cooked, add them to a plate.
- Using the same skillet, add in 1 Tablespoon of olive oil, garlic and arugula and baby spinach mix. Season with salt and pepper, and cook until they become wilted, about 3 minutes. Remove from the heat and add the lemon juice, lemon zest, cucumber, and herbs. Toss everything together.
- To serve, add the whipped feta to the bottom of each plate then top with wilted greens, eggs and avocado. Spoon the chili butter over the top.
