Pistachio Bread

Ingredients:

  • 1 cup roasted pistachios
  • 3 eggs
  • 1 cup maple syrup
  • 1/4 cup milk of choice 
  • 1 teaspoon vanilla extract
  • 1/2 cup cold unsalted butter
  • 1/2 teaspoon baking powder
  • 3 Tablespoons all-purpose flour
  • 1 Tablespoon cornstarch
  • 1/2 teaspoon salt

Instructions:

  1. Preheat the oven to 325 F.
  2. Pulse the pistachios in a food processor until it makes a fine powder.
  3. Add the butter in and pulse until combined.
  4. Add in the milk, eggs and vanilla and pulse until combined.
  5. Next, add in the baking powder, all-purpose flour, salt and cornstarch and pulse until combined.
  6. Transfer the mixture into a loaf pan with parchment paper and bake for an hour.
  7. Once it is done, remove from the oven and allow to cool in the pan. Once it is cooled, transfer to a cooling rack.
  8. Serve and enjoy!
