Spaghetti with Crispy Zucchini
Ingredients:
- 1/2 lb. uncooked spaghetti noodles
- 1 zucchini, cut into thick rounds
- One 24 oz. jar of marinara sauce
- 1 egg
- 1/2 cup parmesan cheese
- 1 cup panko breadcrumbs
- 1 Tablespoon lemon zest
- 1 teaspoon salt and black pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup shredded mozzarella
- 1/4 cup basil leaves, chopped
Instructions:
- Cook the spaghetti according to the package directions. Drain the pasta and toss it with the sauce.
- Preheat the oven to 400 F. Beat the egg in a large bowl and then add in the zucchini and coat with the egg. Add in the parmesan cheese, bread crumbs, spices and lemon zest, coat it as best as you can.
- Transfer the zucchini to a lined baking sheet and drizzle with olive oil. Bake the zucchini for 15-20 minutes until they become golden brown.
- Remove the pan from the oven. Sprinkle it with the shredded mozzarella cheese and return to the oven and broil for 5 minutes. Top with fresh basil.
- Serve the spaghetti into a bowl and top with crispy zucchini. Enjoy!
