Sesame Noodle Buddha Bowl
Try this Sesame Noodle Buddha Bowl for a quick and easy lunch!
Ingredients:
For Dressing:
- 1 Tablespoon tamari
- 1/4 cup rice vinegar
- 1 teaspoon ginger
- 1/2 teaspoon sesame oil
- 1 garlic clove, minced
- 1/2 teaspoon maple syrup
For Bowl:
- 6 ounces ramen rice noodles
- 1 avocado, sliced
- 1/4 cup edamame
- 2 cups snap peas, blanched
- 2 radishes, sliced thin
- Sesame seeds
- Scallions, chopped
- Squeeze of lemon
Instructions:
- Make the dressing: In a small bowl, combine the tamari, rice vinegar, ginger, sesame oil, garlic, and maple syrup and mix.
- Soak the ramen rice noodles in boiling water for 6-8 minutes or according to package. Drain and rinse well in cold water when done.
- Toss the noodles with the dressing, then divide into two bowls. Add the edamame, avocado, snap peas, radishes, and scallions on top of the noodles. Top with sesame seeds, a squeeze of lemon juice and more dressing.
- Serve and enjoy!
