Breakfast Sweet Potato


  • 2 medium sweet potatoes
  • 1 medium banana, sliced
  • 2 Tablespoons almond or peanut butter  
  • 2 teaspoons chia seeds
  • Cinnamon 
  • Salt


  1. Preheat the oven to 375 F. Lime a medium baking sheet with parchment paper.
  2. Use a fork to poke some holes in the two sweet potatoes, then place them on the baking sheet. Roast the sweet potatoes for 45 minutes or until they become tender. Remove them from the oven and let them cool for about 10 minutes.
  3. Once they are cooled and ready to eat, cut down the middle of the sweet potatoes and add in the peanut or almond butter, chia seeds, salt, cinnamon and bananas.
  4. Serve and enjoy!
