Lemon Blueberry Baked Oatmeal

Lemon Blueberry Baked Oatmeal

Ingredients

  • 1/3 cup maple syrup
  • 2 eggs
  • 1/4 cup lemon juice
  • Lemon zest from 1 whole lemon
  • 1 1/2 cups unsweetened almond milk
  • 2 Tablespoons butter, melted
  • 1 teaspoon vanilla 
  • 1/4 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1 cup of fresh blueberries

For Lemon Topping

  • 2 Tablespoons plain Greek yogurt
  • 1 Tablespoon maple syrup for yogurt topping
  • 1 to 2 teaspoons lemon juice
  • 1/2 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350 F. Grease a 9 x 9 pan with oil or add parchment paper.
  2. In a large bowl, add the maple syrup, eggs, lemon zest, butter, lemon juice, almond milk, vanilla & almond extract, and mix until combined.
  3. Add the dry ingredients into the wet, the oats, baking powder, and salt. Mix together and then fold in the blueberries.
  4. Pour the mixture into the greased pan and spread it out evenly. Bake the oatmeal for 40 to 45 minutes or until the edges are golden brown and the center is set. Remove from the oven and let it cool down for at least 10 minutes.
  5. While that is cooling, make the lemon yogurt drizzle. In a small bowl, add the Greek yogurt, lemon juice, maple syrup and lemon zest. Mix until combined.
  6. Drizzle this mixture over top of the baked oatmeal. Cut into slices.
  7. Serve and enjoy!
