Buffalo Shrimp Lettuce Wraps
Ingredients:
- 1 lb. peeled and deveined shrimp, chopped
- 1 Tablespoon olive oil
- 1/3 cup hot sauce
- 2 cloves garlic, minced
- 1/4 cup red onion, chopped
- 1 head romaine lettuce
- 1 celery rib, sliced
- 1/2 cup light blue cheese dressing
- Chopped chives for garnish
Instructions:
- In a large skillet over medium heat, add in the olive oil and heat. Then, add in the shrimp and garlic and cook flipping halfway, until the shrimp is pink and opaque on both sides (about 2 minutes each side). Turn off the heat and add in the hot sauce, tossing and coating.
- Assemble the wraps: add 1/4 cup shrimp in in a piece of lettuce, then top with red onion, celery, blue cheese dressing and chives.
- Serve and enjoy!
