Cherry Chocolate Almond Snack Bar
Ingredients:
- 1/3 cup honey
- 1/3 cup almond meal
- 1/4 teaspoon vanilla extract
- 1 Tablespoon almond butter
- 1/8 teaspoon salt
- 2 cups almonds, whole
- 1/2 cup dried cherries
- 1/3 cup mini chocolate chips
Instructions:
- Preheat the oven to 300F. Line a baking pan (8-inch) with parchment paper.
- In a medium size bowl, mix together the honey, almond meal, vanilla, almond butter and salt. Then fold in the almonds, cherries and chocolate chips.
- Transfer the mixture into the baking pan and press firmly into the bottom to create an even layer. Bake in the oven for 20 minutes, then remove and let cool on a wire rack for at least an hour. Transfer into the fridge for another hour which will help firm them up. Once chilled, cut into bars and wrap in plastic wrap and store in the fridge for up to two weeks.
