Curry Chicken Salad
Ingredients:
- 1 lb. chicken breast
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons curry powder
- 2 Tablespoons olive oil or water
- 2 Tablespoon maple syrup
- 3/4 cup plain Greek yogurt
- 1/4 cup pistachios
- 1/4 cup raisins
- 1/4 cup parsley
- salt and pepper to taste
Instructions:
- Cut the chicken breasts in half horizontally. Add the curry powder, garlic powder, and onion powder onto the chicken. Season with salt and pepper.
- Sauté the chicken in a skillet over medium high heat with a drizzle of olive oil until golden brown and cooked through. When cooled, chop the chicken into small pieces and chill in the fridge.
- Once the chicken is cooled, add it to a medium bowl with all remaining ingredients. Season to taste with more curry powder, onion powder, garlic powder, and salt and pepper.
- Add the chicken salad onto some bread for a sandwich, eat it with some crackers or even eat it plain!
