Curry Chicken Salad

Curry Chicken Salad

Ingredients:

  • 1 lb. chicken breast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons curry powder
  • 2 Tablespoons olive oil or water
  • 2 Tablespoon maple syrup
  • 3/4 cup plain Greek yogurt
  • 1/4 cup pistachios
  • 1/4 cup raisins
  • 1/4 cup parsley
  • salt and pepper to taste

Instructions:

  1. Cut the chicken breasts in half horizontally. Add the curry powder, garlic powder, and onion powder onto the chicken. Season with salt and pepper.
  2. Sauté the chicken in a skillet over medium high heat with a drizzle of olive oil until golden brown and cooked through. When cooled, chop the chicken into small pieces and chill in the fridge.
  3. Once the chicken is cooled, add it to a medium bowl with all remaining ingredients. Season to taste with more curry powder, onion powder, garlic powder, and salt and pepper.
  4. Add the chicken salad onto some bread for a sandwich, eat it with some crackers or even eat it plain!
