Garlic & Turmeric Rice

Garlic & Turmeric Rice


  • 1/2 large onion, diced
  • 2 Tablespoons olive oil
  • 6 cloves of garlic, minced
  • 1 bell pepper, diced
  • 2 Tablespoons fresh turmeric, grated
  • 1/2 teaspoon salt
  • 1 cup uncooked basmati white rice
  • 2 cups of water
  • 1 cup frozen carrot and peas mix
  • 1/2 cup spinach, chopped 
  • Ground black pepper to taste
  • Fresh cilantro, chopped (to top)


  1. Rinse your rice and set aside for cooking.
  2. Place a pot over medium heat and add in the olive oil. Once the oil is warm, add the peppers and onions and sauté for about 5 minutes, until the onions become soft and golden brown. After that, add in the garlic and turmeric, sauté for an additional minute until they become fragrant.
  3. Stir 1 cup of the uncooked rice, pepper and salt into the vegetable mix. Sauté and stir until mixed, then stir in 2 cups of water.
  4. Bring the rice to a boil over medium heat for about 1 minute, then cover and reduce the heat to low for 15 to 18 minutes, until all of the water is absorbed. Remove from the heat, fluff it with a fork and then add in the peas and carrots mix, and spinach, then replace the cover and let the rice steam for an additional 10 minutes. Add salt and pepper to taste.
  5. Let the rice cool down, and top with cilantro.
  6. Serve and enjoy!
