No Bake Brownies
Ingredients:
- 1 cup medjool dates
- 1/4 cup raw pecans
- 1/4 cup raw walnuts
- 1/2 cup pistachios
- 1/4 cup unsweetened coconut shreds
- 3 Tablespoons unsweetened cacao powder
- 1 Tablespoons chia seeds
- 1 Tablespoon coconut oil, melted
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 14 cup dried cranberries
- 1 Tablespoon warm water if needed
For topping:
- 2 ounces of raw dark chocolate
- 1 Tablespoon dried cranberries
- 1 Tablespoon pistachios, chopped
- 1 Tablespoon pecans, chopped
- Sprinkle of sea salt
Instructions:
- In a food processor, add the pecans, walnuts, dates, and pistachios. Mix until chunky.
- After that, add in the chia seeds, coconut shreds, coconut oil, cacao powder, vanilla extract and mix again in the food processor. If the mixture is too clumpy, add in warm water to thin it out.
- Next, add in the remaining pistachios and dried cranberries and pulse a few times. Add the mixture into a loaf pan lined with parchment paper and press it down until it is evenly spread out.
- Add the dark chocolate to a saucepan and place over low heat, mixing until it is fully melted.
- Add the melted chocolate over the mixture in the loaf pan, then sprinkle the chopped pistachios, dried cranberries, and pecans on top.
- Add the bars to the freezer for about 30 to 40 minutes until it hardens.
