Homemade Nachos

Ingredients:

  • 5 extra thin corn tortillas
  • 1/2 avocado, sliced
  • 1 teaspoon taco mix (cumin, salt, garlic powder, paprika
  • 3.5 ounces ground turkey
  • 1/4 cup shredded Mexican cheese
  • 2 Tablespoons corn
  • 1/2 jalapeno, diced
  • 1/2 Tablespoon cotija cheese
  • 2 radishes, sliced
  • 1 Tablespoon sour cream 

Instructions:

  1. In a medium skillet, add in the ground turkey with taco seasoning and cook until turkey is fully cooked through.
  2. Cut the tortillas into 6 to 8 wedges. Lay them onto a baking sheet spray lightly with olive oil spray and sprinkle some salt.
  3. Bake the tortillas at 400 F for 8 to 10 minutes until they become crispy. 
  4. Once the tortillas chips are cooked, add them into a large shallow dish, add the ground turkey on top of them and sprinkle the shredded cheese, bake until the cheese is nice and melted. Top with the corn, jalapenos, cotija cheese, radishes, sour cream and whatever else you would like!
  5. Serve and enjoy!
