Mediterranean Quinoa Bowl


Roasted Red Pepper Sauce:

  • 1 16 ounce jar of roasted red peppers, drained and rinsed
  • One lemon, juiced
  • 1/2 cup olive oil
  • 1/2 cup almonds
  • 1 clove of garlic, chopped
  • 1/2 teaspoon salt

Base & Toppings:

  • Quinoa, cooked
  • Chickpeas
  • Spinach
  • Kalamata olives
  • Red onion, sliced
  • Feta cheese
  • Fresh parsley


  1. In a food processor or blender, combine the roasted red pepper sauce ingredients until it is a thick and textured consistency.
  2. Cook the quinoa according to the package directions.
  3. In a serving bowl, add the quinoa as the base, top with chickpeas, spinach, olives, red onion, feta cheese, parsley and red pepper sauce.
  4. Serve and enjoy!
