Mediterranean Quinoa Bowl
Ingredients:
Roasted Red Pepper Sauce:
- 1 16 ounce jar of roasted red peppers, drained and rinsed
- One lemon, juiced
- 1/2 cup olive oil
- 1/2 cup almonds
- 1 clove of garlic, chopped
- 1/2 teaspoon salt
Base & Toppings:
- Quinoa, cooked
- Chickpeas
- Spinach
- Kalamata olives
- Red onion, sliced
- Feta cheese
- Fresh parsley
Instructions:
- In a food processor or blender, combine the roasted red pepper sauce ingredients until it is a thick and textured consistency.
- Cook the quinoa according to the package directions.
- In a serving bowl, add the quinoa as the base, top with chickpeas, spinach, olives, red onion, feta cheese, parsley and red pepper sauce.
- Serve and enjoy!
