Sheet Pan Chicken Gyros

Ingredients:

Chicken & Veg:

  • 1 lb. boneless, skinless chicken breast, cut into thin strips
  • 1-2 Tablespoons lemon juice
  • 1 Tablespoon olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon curry powder
  • Black pepper to taste 
  • 2-3 bell peppers, sliced

For Serving:

  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup olives
  • 1/2 feta cheese
  • Pita bread (optional)

Tzatziki Sauce:

  • 1-2 Tablespoon olive oil
  • 1-2 Tablespoons lemon juice
  • 3/4 cup plain Greek yogurt
  • 1/2 grated cucumber
  • 1 clove of garlic, small, grated
  • 1 teaspoon dill, dried
  • 1/2 teaspoon salt
  • Black pepper to taste

Instructions:

  1. Preheat the oven to 425 F. Into a bowl, add the lemon juice, olive oil, garlic, cumin, paprika, salt, pepper, curry powder. Then add in the sliced chicken and marinate for about 30 minutes.
  2. In a small bowl, add together the tzatziki ingredients (olive oil, lemon juice, Greek yogurt, cucumber, garlic, dill, salt, pepper).
  3. On a lined sheet pan, toss the peppers with olive oil and salt. Roast for 10-15 minutes until browned.
  4. On another lined sheet pan, add the marinated chicken and cook for 10-15 minutes until fully cooked through.
  5. To a serving bowl, mix and match your choices of additions, then add in the peppers and chicken, top with the Tzatziki sauce.
