Ingredients:
Chicken & Veg:
- 1 lb. boneless, skinless chicken breast, cut into thin strips
- 1-2 Tablespoons lemon juice
- 1 Tablespoon olive oil
- 3 cloves of garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon curry powder
- Black pepper to taste
- 2-3 bell peppers, sliced
For Serving:
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/2 cup olives
- 1/2 feta cheese
- Pita bread (optional)
Tzatziki Sauce:
- 1-2 Tablespoon olive oil
- 1-2 Tablespoons lemon juice
- 3/4 cup plain Greek yogurt
- 1/2 grated cucumber
- 1 clove of garlic, small, grated
- 1 teaspoon dill, dried
- 1/2 teaspoon salt
- Black pepper to taste
Instructions:
- Preheat the oven to 425 F. Into a bowl, add the lemon juice, olive oil, garlic, cumin, paprika, salt, pepper, curry powder. Then add in the sliced chicken and marinate for about 30 minutes.
- In a small bowl, add together the tzatziki ingredients (olive oil, lemon juice, Greek yogurt, cucumber, garlic, dill, salt, pepper).
- On a lined sheet pan, toss the peppers with olive oil and salt. Roast for 10-15 minutes until browned.
- On another lined sheet pan, add the marinated chicken and cook for 10-15 minutes until fully cooked through.
- To a serving bowl, mix and match your choices of additions, then add in the peppers and chicken, top with the Tzatziki sauce.
