Peach Blueberry Oatmeal Cups
Ingredients:
- 1/2 cup almond butter
- 2 Tablespoons coconut oil, melted
- 1/4 cup maple syrup
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup milk of choice
- 2 cups rolled oats
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup diced peaches
- 3/4 cup blueberries
Instructions:
- Preheat the oven to 350 F. Line muffin tins with liners or cooking spray.
- In a bowl, add the coconut oil, almond butter, maple syrup, eggs, milk, and vanilla, mix until it is combined and becomes smooth.
- Stir in the dry ingredients, baking powder, oats, cinnamon, and salt. Fold in the diced peaches and blueberries.
- Add the mixture evenly into the muffin tins and bake for 25 to 30 minutes. Drizzle with more nut butter when serving if desired.
