No Bake Granola Bars
Ingredients:
- 1/2 cup rolled oats
- 1/4 sunflower seeds
- 1/3 cup quinoa, uncooked
- 1/2 cup sunflower butter
- 1/2 cup pumpkin seeds
- 1/3 cup raw honey
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 Tablespoon chia seeds
- 1/4 cup flaxseeds
For Chocolate Drizzle:
- 2 Tablespoons dark chocolate
- 1 teaspoon coconut oil
Instructions:
- Preheat the to 325 F. On a large baking sheet, add the quinoa, pumpkin seeds, sunflower seeds, and oats and spread around evenly. Toast this mixture in the oven for 8 to 10 minutes. Once it is finished, set aside for later.
- In a medium saucepan over low heat, add the vanilla, honey, cinnamon, sunflower butter, and salt. Stir until it become a smooth and creamy texture.
- Remove the saucepan from the heat and let it cool for about 5 minutes. Next, add in the mixture that was toasted in the oven, the quinoa, oats, seeds etc. Stir well to evenly mix.
- Line a loaf pan with parchment paper and add the mixture into it, spread it out evenly across the pan and press down firmly.
- In the microwave, add the chocolate and coconut oil in a bowl and microwave for 20 seconds and drizzle over the pan with the bars in it.
- Add the pan into the freezer for 30 minutes, until the chocolate hardens. Remove from the pan and cut into bars.
- Serve and enjoy!
