Protein Pancakes

Ingredients:

  • 1 Tablespoon vanilla extract
  • 2 large eggs
  • 1 teaspoon stevia 
  • 2 scoops protein powder of choice
  • 1/2 cup Greek Yogurt
  • 1 teaspoon baking powder

Instructions:

  1. In a bowl, combine the vanilla extract, eggs, yogurt and stevia. Then, add in the protein powder in and whisk together until smooth.
  2. Next, whisk in the baking powder. Let the batter sit while the pan heats up.
  3. Heat the skillet over medium heat and spray with non-stick oil spray.
  4. Pour scoops of batter onto the skillet and cook until they become bubbly on top, once that happens flip the pancakes and cook the other side for about 1 minute.
  5. Continue this until all of the batter is gone.
  6. Serve and enjoy!
