Protein Pancakes
Ingredients:
- 1 Tablespoon vanilla extract
- 2 large eggs
- 1 teaspoon stevia
- 2 scoops protein powder of choice
- 1/2 cup Greek Yogurt
- 1 teaspoon baking powder
Instructions:
- In a bowl, combine the vanilla extract, eggs, yogurt and stevia. Then, add in the protein powder in and whisk together until smooth.
- Next, whisk in the baking powder. Let the batter sit while the pan heats up.
- Heat the skillet over medium heat and spray with non-stick oil spray.
- Pour scoops of batter onto the skillet and cook until they become bubbly on top, once that happens flip the pancakes and cook the other side for about 1 minute.
- Continue this until all of the batter is gone.
- Serve and enjoy!
