Snickerdoodle Baked Oatmeal

Snickerdoodle Baked Oatmeal

Ingredients:

  • 2 zucchini, grated
  • 1 1/3 cup oats
  • 1 cup liquid egg whites
  • 1/4 cup almond milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • Optional, 2 scoops snickerdoodle protein powder

Instructions:

  1. Preheat the oven to 350 F.
  2. Grate the zucchini, or add them to a food processor to get them extra fine.
  3. In a large bowl, add the zucchini, almond milk, egg whites, oats, protein powder, vanilla, cinnamon, and baking powder. Mix together until thoroughly combined, then add the mixture to a baking pan that is lined with parchment paper. Bake for about 40 minutes or until it is set and golden brown.
  4. Remove from the oven and let cool before cutting. Cut into 8 pieces. 
  5. Chill in the fridge or serve while hot. Serve with favorite toppings!
