Snickerdoodle Baked Oatmeal
Ingredients:
- 2 zucchini, grated
- 1 1/3 cup oats
- 1 cup liquid egg whites
- 1/4 cup almond milk
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- Optional, 2 scoops snickerdoodle protein powder
Instructions:
- Preheat the oven to 350 F.
- Grate the zucchini, or add them to a food processor to get them extra fine.
- In a large bowl, add the zucchini, almond milk, egg whites, oats, protein powder, vanilla, cinnamon, and baking powder. Mix together until thoroughly combined, then add the mixture to a baking pan that is lined with parchment paper. Bake for about 40 minutes or until it is set and golden brown.
- Remove from the oven and let cool before cutting. Cut into 8 pieces.
- Chill in the fridge or serve while hot. Serve with favorite toppings!
