Turmeric & Tahini Chickpeas

Turmeric & Tahini Chickpeas

Ingredients:

  • 2 cloves garlic, crushed
  • 1 bunch of broccoli, trimmed
  • 1/4 cup tahini
  • 5 Tablespoons of water
  • Squeeze of one lemon
  • 1 bunch of chives, chopped
  • 4-5 handfuls of arugula
  • 1-2 Tablespoons olive oil
  • 1/4 cup pine nuts 
  • Salt to taste

Turmeric Chickpeas

  • 1 can chickpeas, drained and rinsed
  • 1/2 Tablespoon turmeric powder
  • Salt to taste

Instructions:

  1. Make dressing: Add together the water, lemon juice, garlic and tahini in a small bowl and mix together. Set aside.
  2. Bring a saucepan of water to a boil, salt and add in the chopped broccoli until it becomes tender (about 1 to 2 minutes).
  3. In a large bowl, add in the arugula, chives, broccoli, pine nuts and mix with the olive oil and season with salt to taste. Add the tahini mixture across a large platter and add the broccoli mixture and turmeric chickpeas on top.
  4. Serve and enjoy!
