Turmeric & Tahini Chickpeas
Ingredients:
- 2 cloves garlic, crushed
- 1 bunch of broccoli, trimmed
- 1/4 cup tahini
- 5 Tablespoons of water
- Squeeze of one lemon
- 1 bunch of chives, chopped
- 4-5 handfuls of arugula
- 1-2 Tablespoons olive oil
- 1/4 cup pine nuts
- Salt to taste
Turmeric Chickpeas
- 1 can chickpeas, drained and rinsed
- 1/2 Tablespoon turmeric powder
- Salt to taste
Instructions:
- Make dressing: Add together the water, lemon juice, garlic and tahini in a small bowl and mix together. Set aside.
- Bring a saucepan of water to a boil, salt and add in the chopped broccoli until it becomes tender (about 1 to 2 minutes).
- In a large bowl, add in the arugula, chives, broccoli, pine nuts and mix with the olive oil and season with salt to taste. Add the tahini mixture across a large platter and add the broccoli mixture and turmeric chickpeas on top.
- Serve and enjoy!
