Baked Zucchini Fries

Baked Zucchini Fries

Ingredients:

  • 2 large eggs
  • 1 lb. zucchini
  • 1/4 cup parmesan cheese
  • 1 cup gluten free breadcrumbs
  • 1/2 teaspoon salt
  • 1 Tablespoon Italian seasoning (Oregano, Marjoram, Basil, Thyme, Sage, Rosemary)
  • 1/2 cup marinara sauce
  • 2 Tablespoons gluten free all purpose flour

Instructions:

  1. Preheat the oven to 425 F. Slice the zucchini into thick strips.
  2. In a bowl, mix together the parmesan cheese, bread crumbs, Italian seasoning, and salt.
  3. Whisk the eggs together in another bowl. 
  4. Bread the zucchini strips by dipping them in the eggs and then into the dry mixture. Then place the dipped zucchini on a wire rack, leaving room between them for airflow. 
  5. Once they are all on racks, add the racks to a large baking sheet, then baked the zucchini for 20 minutes or until they are golden.
  6. Serve with marinara sauce and enjoy!
