Baked Zucchini Fries
Ingredients:
- 2 large eggs
- 1 lb. zucchini
- 1/4 cup parmesan cheese
- 1 cup gluten free breadcrumbs
- 1/2 teaspoon salt
- 1 Tablespoon Italian seasoning (Oregano, Marjoram, Basil, Thyme, Sage, Rosemary)
- 1/2 cup marinara sauce
- 2 Tablespoons gluten free all purpose flour
Instructions:
- Preheat the oven to 425 F. Slice the zucchini into thick strips.
- In a bowl, mix together the parmesan cheese, bread crumbs, Italian seasoning, and salt.
- Whisk the eggs together in another bowl.
- Bread the zucchini strips by dipping them in the eggs and then into the dry mixture. Then place the dipped zucchini on a wire rack, leaving room between them for airflow.
- Once they are all on racks, add the racks to a large baking sheet, then baked the zucchini for 20 minutes or until they are golden.
- Serve with marinara sauce and enjoy!
