Vanilla Blueberry Cake

Vanilla Blueberry Cake

Ingredients:

  • 1 3/4 cups plus 1 teaspoon whole wheat flour 
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/2 cup maple syrup
  • 2 eggs
  • 6 Tablespoons butter, melted
  • 2/3 cups milk of choice 
  • 2 teaspoons vanilla extract
  • 3 cups of blueberries, frozen or fresh 

Instructions:

  1. Preheat the oven to 400 F. Line a baking pan with parchment paper and spray or butter the sides of the pan to help with the cake sticking.
  2. In a large mixing bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. Whisk together.
  3. In a seperate mixing bowl, combine the butter and maple syrup, beat together with a whisk. Add the eggs and beat together well, then add in the milk and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until combined. Add the blueberries into the batter and fold them in.
  5. Pour the batter into the lined baking pan, add more blueberries on top.
  6. Bake the cake for about 35 minutes or until the cake is golden brown on the top and an inserted toothpick into the center comes out dry.
  7. Once it is finished, place it onto a cooling rack.
  8. Once cooled, serve and enjoy!
