Vanilla Blueberry Cake
Ingredients:
- 1 3/4 cups plus 1 teaspoon whole wheat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/2 cup maple syrup
- 2 eggs
- 6 Tablespoons butter, melted
- 2/3 cups milk of choice
- 2 teaspoons vanilla extract
- 3 cups of blueberries, frozen or fresh
Instructions:
- Preheat the oven to 400 F. Line a baking pan with parchment paper and spray or butter the sides of the pan to help with the cake sticking.
- In a large mixing bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. Whisk together.
- In a seperate mixing bowl, combine the butter and maple syrup, beat together with a whisk. Add the eggs and beat together well, then add in the milk and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until combined. Add the blueberries into the batter and fold them in.
- Pour the batter into the lined baking pan, add more blueberries on top.
- Bake the cake for about 35 minutes or until the cake is golden brown on the top and an inserted toothpick into the center comes out dry.
- Once it is finished, place it onto a cooling rack.
- Once cooled, serve and enjoy!
