Veggie Egg Bites
Ingredients:
- 6 large eggs
- 3/4 cup cottage cheese
- Olive oil to spray pan
- 3 cups spinach, fresh
- 1/2 cup bell peppers, chopped
- 1/2 cup green onion, chopped
- Black pepper
- 1/4 teaspoon salt
Instructions:
- Preheat the oven to 350 F and grease a muffin tin with olive oil.
- In a blender, add the cottage cheese, eggs, salt and pepper. Blend until it is smooth.
- Add the spinach into a steamer basket and set over a pot with about 1 inch of boiling water. Steam the spinach for 1 minutes or until it becomes wilted. Transfer to a strainer and get as much liquid out as you can.
- Add the spinach to a bowl and add the peppers and scallions, toss to combine.
- Evenly divide the veggies into the muffin tins and pour the egg mixture evenly over all of the muffin tins.
- Bake the tins for 18 to 22 minutes or until the eggs are set. Let them cool for 5 minutes before removing from the pan.
- Serve and enjoy!
