Veggie Egg Bites

Ingredients:

  • 6 large eggs
  • 3/4 cup cottage cheese
  • Olive oil to spray pan
  • 3 cups spinach, fresh
  • 1/2 cup bell peppers, chopped
  • 1/2 cup green onion, chopped
  • Black pepper
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350 F and grease a muffin tin with olive oil. 
  2. In a blender, add the cottage cheese, eggs, salt and pepper. Blend until it is smooth.
  3. Add the spinach into a steamer basket and set over a pot with about 1 inch of boiling water. Steam the spinach for 1 minutes or until it becomes wilted. Transfer to a strainer and get as much liquid out as you can.
  4. Add the spinach to a bowl and add the peppers and scallions, toss to combine.
  5. Evenly divide the veggies into the muffin tins and pour the egg mixture evenly over all of the muffin tins.
  6. Bake the tins for 18 to 22 minutes or until the eggs are set. Let them cool for 5 minutes before removing from the pan.
  7. Serve and enjoy!
