Zucchini Brownies

Zucchini Brownies

Ingredients:

  • 2 Tablespoons ground flaxseeds
  • 1 1/4 cup all purpose flour
  • 5 Tablespoons water
  • 2/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup maple syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut oil
  • 2 cups zucchini, grated
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat the oven to 325 F and line a baking pan with parchment paper.
  2. In a bowl, add the flaxseed and water, mix together and set aside for 5 minutes to thicken.
  3. In another bowl, add together the flaxseed mixture, maple syrup, coconut oil, vanilla extract and whisk together, then stir in the zucchini.
  4. Add the dry ingredients into the zucchini mixture and stir to combine until there are no more dry spots. Fold in the chocolate chips.
  5. Add the batter into the lined pan and smooth out the top. Sprinkle with more chocolate chips and salt.
  6. Baked the brownies for 45 to 50 minutes or until the brownies set.
  7. Let them cool for about at least an hour before cutting them.
  8. Serve and enjoy!
