Zucchini Brownies
Ingredients:
- 2 Tablespoons ground flaxseeds
- 1 1/4 cup all purpose flour
- 5 Tablespoons water
- 2/3 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 cup maple syrup
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup coconut oil
- 2 cups zucchini, grated
- 1/2 cup dark chocolate chips
Instructions:
- Preheat the oven to 325 F and line a baking pan with parchment paper.
- In a bowl, add the flaxseed and water, mix together and set aside for 5 minutes to thicken.
- In another bowl, add together the flaxseed mixture, maple syrup, coconut oil, vanilla extract and whisk together, then stir in the zucchini.
- Add the dry ingredients into the zucchini mixture and stir to combine until there are no more dry spots. Fold in the chocolate chips.
- Add the batter into the lined pan and smooth out the top. Sprinkle with more chocolate chips and salt.
- Baked the brownies for 45 to 50 minutes or until the brownies set.
- Let them cool for about at least an hour before cutting them.
- Serve and enjoy!
