15 Minute Cauliflower Fried Rice

15 Minute Cauliflower Fried Rice


  • 1 medium cauliflower, chopped
  • 1 large carrot, cubed
  • 2 cloves of garlic, minced
  • 1 Tablespoons sesame oil
  • 1 cup edamame, frozen
  • 3 Tablespoons tamari
  • 2 whole eggs, beaten
  • 6 green onions, minced


  1. In a food processor, add the chopped cauliflower and pulse until it become very small and rice like.
  2. Heat 1 Tablespoons sesame oil in a large skillet over medium heat. Add in the garlic and carrots, cook until fragrant, about 5 minutes. Next, add in the edamame, cauliflower, remaining sesame oil. Stir fry until the cauliflower becomes soft but not mushy.
  3. Make a well in the middle of the fried rice, add in the two eggs. Stir gently until the eggs become fully cooked. Stir in the tamari and green onions before serving.
  4. Serve and enjoy!
