Cashew Chicken
Ingredients:
Chicken:
- 3/4 cup flour
- 1 teaspoon salt
- 3/4 cup cornstarch
- 1/2 teaspoon paprika
- 3/4 cup cold water
- 1 lb. boneless chicken breasts, chopped into small cubes
- 1/2 cup oil for frying
- 1 cup cashews, halved
Sauce:
- 1/2 cup hoisin sauce
- 1/4 cup tamari
- 1 Tablespoons sriracha
- 2 Tablespoons white vinegar
- 1/4 cup maple syrup
- 2 cloves of garlic, grated
- Fresh ginger, grated
Instructions:
- Make the sauce: Whisk together all of the sauce ingredients and set aside for later.
- In a bowl, mix the flour, cornstarch, paprika and salt. Set aside half of this mixture. Mix the other half with the 3/4 cup of cold water to form a loose batter.
- Fry the chicken: Heat the oil over medium heat. Coat the chicken pieces in the batter and add into the oil. Fry the chicken pieces for 2-3 minutes on each side. Remove from the pan and add to a paper towel to drain excess oil.
- Once the chicken is all fried, add the chicken back into the pan. Add in the sauce and cashews, stir for about 1 minute until the chicken becomes coated.
- Serve with favorite side and enjoy!
