Garlic & Sun-Dried Tomato Pasta


  • 1 (8-ounce) box pasta of choice
  • 1/3 cup white cooking wine
  • 2 cloves of garlic
  • 1/4 cup sun-dried tomatoes
  • 3/4 cup heavy cream 
  • 1 cup spinach, chopped
  • 1/2 cup reserved pasta water 
  • 1 bunch of chives, chopped 
  • Olive oil for sautéing 
  • salt and pepper to taste
  • Parmesan cheese for serving


  1. Cook the pasta according to the package.
  2. Heat a skillet over medium heat and sauté the sun-dried tomatoes and garlic with some olive oil.
  3. Next, add in the cooking wine and let it sizzle and reduce. Add in the spinach and heavy cream, bring it to a simmer. Season with salt and pepper.
  4. Stir in the cooked pasta, add the reserved pasta water as needed to help stir in the pasta.
  5. Serve with parmesan cheese to top and enjoy!
