Garlic & Sun-Dried Tomato Pasta

Ingredients:
- 1 (8-ounce) box pasta of choice
- 1/3 cup white cooking wine
- 2 cloves of garlic
- 1/4 cup sun-dried tomatoes
- 3/4 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup reserved pasta water
- 1 bunch of chives, chopped
- Olive oil for sautéing
- salt and pepper to taste
- Parmesan cheese for serving
Instructions:
- Cook the pasta according to the package.
- Heat a skillet over medium heat and sauté the sun-dried tomatoes and garlic with some olive oil.
- Next, add in the cooking wine and let it sizzle and reduce. Add in the spinach and heavy cream, bring it to a simmer. Season with salt and pepper.
- Stir in the cooked pasta, add the reserved pasta water as needed to help stir in the pasta.
- Serve with parmesan cheese to top and enjoy!
