Homemade Coconut Cookies
Ingredients
- 3 large eggs
- 1 cup sweetened coconut flakes
- 3/4 cup sugar
- 3/4 cup cornflake crumbs
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350 F. Line two cookie sheets with parchment paper.
- In a bowl, whip the egg whites, sugar, and cream of tartar until it becomes a meringue, about 8 to 10 minutes.
- Fold in the coconut and corn flake crumbs.
- Drop each spoonful onto the lined baking sheets.
- Bake for 18 to 20 minutes or until they become golden.
- Let cool for about 10 minutes.
