Bang Bang Shrimp
Ingredients:
- 1 lb. shrimp, peeled and deveined
- 4 Tablespoons Sweet Thai Chili Sauce
- 4 Teaspoons nonfat Greek yogurt
- 2 Teaspoons sriracha
- 4 cups of broccoli, chopped
- 2 cups white rice, cooked
- 2 Tablespoons scallions, chopped for topping
- Salt and pepper to taste
Instructions:
- In a bowl, combine the sriracha, chili sauce and Greek yogurt, combine.
- Spray the shrimp with cooking spray and season it with salt and pepper. Air fry or bake the shrimp at 400 F for 8-10 minutes until the shrimp is fully cooked through.
- Cook the rice according to the package.
- Steam the broccoli on the stovetop or the microwave.
- Mix the shrimp with the bang bang sauce and serve over rice and broccoli, top with scallions.
