Bang Bang Shrimp

Bang Bang Shrimp

Ingredients:

  • 1 lb. shrimp, peeled and deveined
  • 4 Tablespoons Sweet Thai Chili Sauce
  • 4 Teaspoons nonfat Greek yogurt 
  • 2 Teaspoons sriracha 
  • 4 cups of broccoli, chopped
  • 2 cups white rice, cooked
  • 2 Tablespoons scallions, chopped for topping
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the sriracha, chili sauce and Greek yogurt, combine.
  2. Spray the shrimp with cooking spray and season it with salt and pepper. Air fry or bake the shrimp at 400 F for 8-10 minutes until the shrimp is fully cooked through.
  3. Cook the rice according to the package.
  4. Steam the broccoli on the stovetop or the microwave.
  5. Mix the shrimp with the bang bang sauce and serve over rice and broccoli, top with scallions.
  6. Enjoy!
