Carrot Cake Bites

Carrot Cake Bites

Ingredients:

  • 1 medium carrot, chopped
  • 1/2 cup pure maple syrup
  • 1/2 cup almond butter
  • 2 cups old fashioned oats
  • 2 cups unsweetened coconut flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 teaspoon cinnamon
  • Small dark chocolate chips (optional)

Instructions:

  1. Add carrots into a food processor and pulse until they become finely chopped.
  2. Remove the carrots and add into a seperate bowl.
  3. Add the coconut and rolled oats into the food processor and pulse until it becomes ground.
  4. Next, add in the maple syrup, almond butter, salt, vanilla, cinnamon and the chopped carrots. Pulse all of the ingredients together until it forms a sticky dough.
  5. Add the dark chocolate chips and pulse until they are chopped smaller.
  6. Use a small scoop to portion out dough and roll into balls. 
  7. Line a baking sheet with the carrot cake bites and put them into the fridge or freezer for storage.
  8. Enjoy!
